Opskrift:
150 g fint speltmel
100 g boghvedemel
1 tsk bagepulver
125 g smeltet mælkefri margarine
1 spsk gylden rørsukker
2 spsk honning
1 spsk vaniljesukker
2 æg
2½ dl sojadrik
evt. lidt fedtstof til vaffeljernet
Mel og bagepulver sigtes sammen i en skål.
Pisk smeltet margarine, sukker, honning, vaniljesukker og æg sammen i en skål.
Rør skiftevis mel og sojadrik i dejen ad flere omgange til du har en glat dej. Dæk skålen til og lad den hvile i køleskab i 1 times tid - vi bruger den dog tit med det samme.
Bages i vaffeljern.

The English Corner
Weekend visits by our elder daughter occasionally results in unexpected treats. Last weekend she made us waffles.
Recipe:
150 g fine spelt flour
100 g buckwheat flour
1 tsp baking powder
125 g melted dairyfree margarine
1 tbsp golden sugar
2 tbsp honey
1 tbsp vanilla sugar
2 eggs
250 ml soy milk
a little margarine for the waffle iron
Sift the flours and baking powder together.
Beat the margarine, sugar, honey, vanilla sugar and eggs well in a bowl using an electrical mixer.
Alternately stir in the flour and soy milk bit by bit, until you have a smooth batter. Cover the bowl and refrigerate for 1 hour - you can skip this step if you're impatient.
Bake in a waffle iron.
